Spicy baked beans with sausage

Ingredients

  • 1 tbsp vegetable oil or ghee or butter
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tin baked beans (white cooked beans in tomato sauce)
  • 1 medium onion, chopped
  • 2 cloves garlic finely chopped
  • 2 medium green chilies finely chopped Adjust to taste.
  • 1 medium sausage diced. Optional
  • 2 tbsp tomato ketchup
  • Salt and black pepper to taste
  • 8 slices Bread of your choice Toasted in the toaster or under the grill
  • Butter or margarine to spread on toast.

Instructions

  • Heat the oil in a medium pan
  • Add mustard and cumin seeds when oil is hot

  • Add onions, garlic and chilies when seeds start to splutter

  • Saute the onions for -3 minutes until translucent.
  • Add diced sausage. (optional)
  • Add the baked beans and stir.

  • Add the ketchup and stir again. Add salt and pepper to taste. You can also add fresh chopped coriander here
  • Reduce heat to minimum.
  • If the spicy beans are too firm, add up to half a cup of water. This will help to serve the beans.
  • While the beans are bubbling, toast the bread.
  • Butter the toast before serving the spicy beans on top.
  • Enjoy the result.

Notes

It must be our spicy palate that makes me add the chilies, garlic and sometimes ginger to many of the western meals. One wonders whether you taste the spices more or the actual ingredients! Whatever it is, it sure makes the dish more yummy. Depending on your cooking or eating habits, you can add or omit the onion, garlic and even sausage! You can even use other tinned beans, always remembering to add the tomato sauce.
